Not until you open it. It is hot-filled and acid-stable, so an unopened bottle is fine in a cupboard. Once opened, refrigerate — it will hold about six months, though it rarely gets the chance.
Because there is nothing in it to stop that. No xanthan, no gums, no stabilisers. Separation is what an unthickened sauce does. Shake it hard.
Mouser is 2/10 — a squeeze of heat behind the lime. Catbird Seat is 5/10, warm and building. Hackle is 8/10 and genuinely hot, front-loaded and gone in about a minute. Scoville numbers are on each product page for the people who want them.
We make it in a home kitchen under the Tennessee Food Freedom Act. That exemption is a Tennessee statute and it stops at the state line. Merch has no such limit and ships anywhere in the US. Out-of-state sauce arrives when we move to a co-packer.
State law requires it: the sauce is produced in a private residence that is exempt from state licensing and inspection. We would rather show you the pH log than hide the sentence.
Every recipe is validated by a process authority at the University of Tennessee, which sets the maximum equilibrium pH and the fill temperature. We measure pH on every batch with a calibrated meter and keep the records for three years. The numbers are on the Batch page.
None of the nine major allergens are used. Everything in the bottle is on the label — peppers, vinegar, salt, aromatics. No dyes, no extract, no "natural flavors."
Printed to order, three to five business days before it ships. Nothing sits in a box, which is also why there is no size-XL pallet in a garage somewhere.

Not yet. Food service establishments follow the Food Code and cannot cook with food from an uninspected kitchen. They can sell sealed bottles at the counter. That changes when we move to a co-packer.
